Cut Profile: The Pork Collar is taken from the center portion of the upper Shoulder and is the continuation of the Loin muscle as it travels into the Shoulder. Referred to as ‘Coppa’ and the ‘Money Cut’, it is ideal for either slow, low-heat cooking for a flavorful, pull-apart experience; or portion the front half into 1.25” boneless chops for high heat grilling or searing.

Notes: The term ‘Kurobuta’ literally means ‘Black Hog’ in Japanese and refers to the Berkshire heritage breed. Snake River Farms Kurobuta pork is considered to be equal in status to “Kobe Beef”. They use only 100% purebred Berkshire hogs, as mandated by the Japanese Ministry of Agriculture.
