Cut Profile: Steak Tips are an East Coast specialty, rarely available on the West Coast. Our Steak Tips are pulled from the ‘Bottom Sirloin Flap’ section in the belly area of the animal. The French term for this cut is ‘Bavette’ and in Latin America is known as ‘Vacio’, usually sliced thin and used for Carne Asada. Ideal for high heat grilling with plenty of charred bits for added texture and flavor.

Marinade: A mildly spiced traditional Italian flavor with a hint of black pepper and yellow mustard seed. Savory and full-flavored, pairs well with almost everything.
